Add to this that the grapes are harvested by hand and after a long, cold fermentation in tank, the wine remains on its fine lees for 4 or 5 months before a light filtration and the addition of pure alcohol to bring the strength up to 15% abv. Smooth and silky with a great concentration of ripe, grapey fruit, fantastically balanced by a fresh acidity. This is an outstanding estate in a village that is otherwise dominated by the local cooperative.
