50cl / 21% - Cascara is the fruit of the coffee cherry, and innumerable tonnes of it are thrown away every year during the coffee production process. Discarded take this fruit and steep it in a fortified wine which is itself discarded after seasoning whisky barrels, creating a flavourful and complex vermouth.
